Peppered Strawberry Layered Egg Crêpe
															
															Ingredients
- 100 EggSolutions Grilled Egg Sheets
 - 1½ L 35% cream
 - 1 tbsp cinnamon
 - ½ cup maple syrup
 - 6 lbs strawberries
 - 1 cup orange juice
 - 2 tbsp orange vodka
 - 2 tbsp coarse ground black pepper
 
Directions
- Wash strawberries and cut each in half.
 - Mix orange juice, vodka and black pepper together, then toss with strawberries. Allow to marinate for at least 2 hours.
 - Heat egg sheets to an internal temperature of 165°F (74°C) on a grill, in a microwave, or in an oven pre-heated to 300°F (139°C).
 - Place 30% cream into a chilled mixing bowl and whip until peaks form. Add cinnamon and maple syrup, then continue whipping for a few minutes. Do not over whip.
 - Cut each egg square in half to form 2 squares.
 - Place 1 egg square on a plate. Pipe whipped cream onto square to cover. Top cream with strawberries, then place another egg square on top.
 - Repeat to create additional layers, as desired.
 - Garnish with strawberries and whipped cream and serve.
